Chicken Sheet Pan Dinner
This easy dinner can be prepared in 45 minutes so that you can enjoy a home-cooked baked chicken any night of the week!

  • 4 pound Chicken
  • 2 Sweet potatoesUnpeeled and cut into eighths
  • 2 OnionsPeeled and quartered with root intact
  • 8 CarrotsPeeled, halved and then quartered
  • 1/8cup olive oil
  • 2teaspoons Sea salt
  • 1/4teaspoon Black pepper
  • 1/8teaspoon Red pepper flakes
  • 1/2stick ButterCubed
  1. Cut out the backbone of the chicken using the spatchcock technique, and save the backbone for making bone broth.
  2. Flatten chicken breast side up and tuck wings under chicken body.
  3. Scatter potatoes, carrots, and onions around the chicken on the sheet pan.
  4. Drizzle everything with olive oil.
  5. Sprinkle salt and black peppers over chicken, potatoes, onions, and carrots.
  6. Dot everything with butter.
  7. Bake in 425 degree Fahrenheit oven for 45 minutes until chicken skin is golden brown.
  8. Remove from oven, transfer chicken, potatoes, onions, and carrots to a serving platter, bring to the table, and enjoy!
