Homemade Granola Bars – Easy One Bowl Recipe

Yield: 12 bars
These are delicious Sweet and Salty Granola Bars filled with peanuts and currants.

Ingredients

  • 2 1/2 cup Old-Fashioned Oats Do not use quick-cook oats
  • 2 tablespoons Dried cane juice White cane sugar can be substituted
  • 1 1/2 cups Mixed nuts, seeds, chocolate chips, and/or coconut Nuts and seeds may be salted or unsalted. If unsalted add salt as stated below.
  • 1/3 cup Coconut oil
  • 1/3 cup Honey Use a pourable honey
  • 1 teaspoon Vanilla extract
  • 1/2 tsp Fine ground sea salt, optional Omit if using salted nuts or seeds

Instructions 

  • Preheat your oven to 350°F (177°C).
  • Add all ingredients together in a bowl and mix well so that all the dry ingredients are well coated by the wet ingredients. (If not using salted nuts or seeds, add salt.)
  • Use an 8 x 11 inch pan or a 9 x 9 inch pan and line it with parchment paper allowing some of the parchment paper to hang over the side of the pan.
  • Add the oat mixture to the pan and spread it out evenly. Then press the oat mixture down to compact it tightly.
  • Transfer the pan to the oven and bake for approximately 25-30 minutes until the oat mixture is a golden brown.
  • Remove the pan from the oven and transfer to a cooling rack. Allow to cool completely, then remove the oat mixture from the pan using the parchment paper. Slice the oat mixture into 12 bars.
  • Wrap bars individually in parchment paper or waxed paper and then place in a plastic bag. Refrigerate.
  • Granola Bars will stay fresh for approximately 2 weeks
