Ingredients

Ingredients Needed for Make Ahead Noodle Soup Mix

  • 1 pound Thin spaghetti You can substitute other pasta or egg noodles. For larger shaped pastas or noodles, you will need approximately two cups as opposed to one pound.
  • 1/2 cup Dehydrated vegetables If you do not have dehydrated vegetables, you can leave them out and add in fresh vegetables when you make the soup.
  • 1 tsp Salt Omit if using store-bought bouillon powder. (See below.)
  • 1/4 tsp Black pepper
  • 1/4 tsp Red pepper flakes, optional
  • 1/4 cup Bouillon powder, preferably homemade You can use any bouillon powder: chicken, turkey, beef, or vegetable. If using store-bought bouillon powder, omit salt.

  • 1 Quart Jar Make Ahead Noodle Soup Mix
  • 4 Quarts Water
  • Cooked chicken, optional You can substitute another cooked meat for cooked chicken.
  • Cooked vegetables, optional
  • Raw vegetables, chopped into bite-sized pieces, optional

Instructions

How to Prepare Make Ahead Noodle Soup Mix

  • Add all ingredients into a quart-sized jar, either mixed together or layered, and put the lid on the jar. (See video.)
  • This Make Ahead Noodle Soup Mix should have a shelf life of approximately six months unrefrigerated.

How to Make Soup using the Make Ahead Noodle Soup Mix

  • Bring 4 quarts of water to a boil in a large stockpot and empty the contents of the jar containing the Make Ahead Noodle Soup Mix into the boiling water.
  • Return the water to a boil, turn the heat down to a medium simmer, and allow the soup to simmer for 10 minutes.
  • If adding raw vegetables, add them to the soup pot at the same time you add the soup mix.
  • If using cooked meats or cooked vegetables, add them to the stockpot for the last two minutes of cooking time to allow them to warm through.
  • You can store leftovers in the refrigerator, sealed well, for 2-3 days, and then rewarm in a saucepan on the stovetop.
