Homemade Granola Bars - Easy One Bowl Recipe
These are delicious Sweet and Salty Granola Bars filled with peanuts and currants.

- 2 1/2 cup Old-Fashioned Oats Do not use quick-cook oats
- 2 tablespoons Dried cane juice White cane sugar can be substituted
- 1 1/2 cups Mixed nuts, seeds, chocolate chips, and/or coconut Nuts and seeds may be salted or unsalted. If unsalted add salt as stated below.
- 1/3 cup Coconut oil
- 1/3 cup Honey Use a pourable honey
- 1 teaspoon Vanilla extract
- 1/2 tsp Fine ground sea salt, optional Omit if using salted nuts or seeds
Preheat your oven to 350°F (177°C).
Add all ingredients together in a bowl and mix well so that all the dry ingredients are well coated by the wet ingredients. (If not using salted nuts or seeds, add salt.)
Use an 8 x 11 inch pan or a 9 x 9 inch pan and line it with parchment paper allowing some of the parchment paper to hang over the side of the pan.
Add the oat mixture to the pan and spread it out evenly. Then press the oat mixture down to compact it tightly.
Transfer the pan to the oven and bake for approximately 25-30 minutes until the oat mixture is a golden brown.
Remove the pan from the oven and transfer to a cooling rack. Allow to cool completely, then remove the oat mixture from the pan using the parchment paper. Slice the oat mixture into 12 bars.
Wrap bars individually in parchment paper or waxed paper and then place in a plastic bag. Refrigerate.
Granola Bars will stay fresh for approximately 2 weeks
