Slice loaf of bread into 8 thick-cut slices approximately 3/4" thick.
Allow bread to stale at room temperature overnight or dry out bread in a 350°F oven for approximately five minutes.
Make the custard by mixing the half and half, maple syrup, salt, and eggs together until well blended. Also add the cinnamon and vanilla extract, if using.
Pour the custard into a shallow pan and dip each piece of bread into the custard for 30 seconds on each side.
Place the dipped bread on a parchment-lined baking sheet or a wire rack that's placed on a baking sheet. Allow each slice to rest and absorb the custard as you continue to dip the remaining slices of bread.
Warm a frying pan on low to medium-low heat and add a small amount of butter to coat the bottom of the pan.
Once the butter has melted, add the first piece of dipped bread to the pan and allow it to cook for 2-3 minutes per side or until golden brown and crisp.
Remove the golden toast to a heat-proof serving platter that's placed into a warm oven. Adjust the oven heat on the lowest setting to keep the French Toast warm as you continue to cook each piece.
Serve warm topped with maple syrup and powdered sugar. Enjoy!
