Notes

Infused honey must be stored in the refrigerator. For maximum freshness use it up within 2-3 months.
For best flavor use fresh, finely grated ginger. The smaller pieces will allow more of the ginger flavor to infuse the honey.
Cook over low heat. You want to gently heat the honey at a simmer rather than it boiling.
Note: I am not a doctor or medical professional. If you are not feeling well, please seek professional medical attention and medicine. And if you are thinking of supplementing your treatment with home remedies, be sure to talk to your medical professional about them. It's important that you get the medicine and treatments you need to get back to good health.
Also, remember that honey should never be given to infants under the age of one. And if you decide to introduce honey into your toddler's diet, be sure to check with your pediatrician first.
How I use Ginger Honey: I like to take a teaspoon of ginger honey each day during cold and flu season and increase it to 2-3 teaspoons each day at the onset of a cold. A teaspoon of the ginger honey can also be mixed into hot water to make a soothing tea. Add a squeeze of lemon for a Vitamin C boost. This is what I like to do.
