Cuisine: Americana
Servings: 4 servings
1 Blender or Food Process
1 Colander
1 Flour sack towel or cheesecloth
1 Large bowl
1 Half-gallon jar with screw on lid
4 Glass bottles with screw on lids
- 1 cup sliced strawberries This will yield about 2 cups of juice).
- 1/3 cup white cane sugar
- 1 Juice of one lemon
- 1 cup Ginger bug (See Recipe Notes.)
- 2 cups Chlorine-free water
In a food processor or blender, combine the sliced strawberries with the sugar and lemon juice. Blend until smooth.
Pour the pureed strawberry mixture through a fine mesh strainer into a large bowl to remove seeds and pulp.
To the strained juice, add the ginger bug and just enough chlorine-free water to bring the total liquid to 4 cups. Stir gently to combine.
Pour the mixture into a clean quart-size canning jar. Seal with a tight-fitting lid.
Store the jar in a warm spot out of direct sunlight. Each day, slightly loosen the lid to release any built-up carbon dioxide.
Begin checking the soda after two days to see if it has the level of carbonation and sweetness you like. Once it's bubbly and to your taste, it's ready!
Chill the soda in the fridge, enjoy it at room temperature, or pour it over ice. Any leftovers can be stored in the refrigerator, but it may lose carbonation over time.
