BLT Sandwich with Smashed Tomatoes
With the abundance of ripe, juicy tomatoes in peak season here in Central Texas, I can't think of a better way to use them than on a BLT sandwich, and I'll show you how in this easy and tasty recipe.

- 2 tbsp Mayonnaise
- 1 tsp Sweet Pickle Relish
- 2 slices Sourdough Bread
- 4 slices Crispy Bacon
- 8 Cherry Tomatoes
- 2 leaves Iceberg Lettuce
Bake bacon in oven. (See cook's notes for a video and instructions.)
Pat the bacon dry and allow to cool.
Toast sourdough bread.
Mix mayonnaise with sweet relish and set aside.
Smash cherry tomatoes on a plate using a fork and set aside.
Remove two lettuce leaves from a head of iceberg lettuce. Wash the lettuce leaves, dry well, and set aside.
Slather a generous amount of the mayonnaise and relish mixture on one side of one slice of the sourdough bread.
Place bacon, smashed tomatoes, and folded lettuce leaves onto the slice of sourdough bread spread with the mayonnaise and relish mixture.
Slather the mayonnaise and relish mixture on one side of the other slice of bread. Place the slathered side of the bread face down on top of the lettuce to make a sandwich.
Press down on the sandwich and slice it in half. Enjoy!
