Can Food Fight Disease?
I confess that I have been binge-watching YouTube videos lately. As YouTube creators, we don’t always have a lot of free time to enjoy the videos of other creators, but every once in a while, YouTube surfaces a video that I can’t help but click on. This was the case when YouTube presented me with a video by Dr. William Li, MD.
You may be familiar with Dr. Li as the bestselling author of Eat to Beat Disease: The New Science of How Your Body Can Heal Itself and his follow-up bestseller Eat to Beat Your Diet: Burn Fat, Heal Your Metabolism, and Live Longer. In these books, Dr. Li talks about the importance of eating certain foods that have been scientifically proven to fight disease. And it will come to many of you as no surprise that some of the foods at the top of the list are—yep, you guessed it—VEGETABLES!
What did our moms always say to us when we were young? “Eat your vegetables!” I don’t know about you, but as I have become older, I have come to realize that my mother was always right! Vegetables may be the secret ingredient to great health, a slim but strong figure, and a long life. But how and when we eat our vegetables may play a key role in making them a superfood for good health.
What to Eat First?
As anyone who has binged watched a few YouTube videos (and I am hoping you have binge-watched a few of mine!), you know that YouTube regularly surfaces similar videos to those you have watched. Case in point was that as I watched Dr. Li’s videos, YouTube also recommended videos by a woman who goes by the nickname, “The Glucose Goddess.” She may have a funny name, but she discusses a serious subject in her bestselling book, The Glucose Goddess Method.
In reality, this woman is Jessie Inchauspé, a French biochemist who shares something that goes one step beyond what Dr. Li teaches us in his first book, Eat to Beat Disease. Among the ten tips she shares in her book on how to control our insulin/glucose levels is the tip that the order in which we eat our food is critical to good health.
To avoid this crash, Inchauspé recommends eating our vegetables first, usually in the form of a salad drizzled with a vinaigrette dressing made with apple cider vinegar. The salad vegetables and the vinegar work together to create an environment in our stomach that prevents a big insulin spike when we proceed to eat the rest of our meal. And the better we can control our insulin, Inchauspé shares that scientists tell us, the healthier we will be.
