Dry Ingredients:
🥣 2 1/4 cups freshly milled Einkorn flour
🥄 2 teaspoons baking powder
🥄 1/2 teaspoon baking soda
🧂 1/2 teaspoon fine sea salt
🍂 1 teaspoon ground cinnamon
🌰 1/4 teaspoon nutmeg (optional)
🍯 1 cup chopped pitted dates
🥜 1/2 cup chopped walnuts (or pecans)

🥛 1 cup buttermilk
🧈 1/2 cup unsalted butter, melted and slightly cooled
🍁 2/3 cup dark maple syrup (or honey)
🥚 2 large eggs, room temperature
🌼 1 1/2 teaspoons vanilla extract
How to Make Einkorn Date Nut Bread

1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper for easy removal, or very lightly grease the loaf pan.
2. Grind Einkorn wheat berries and measure out 2 1/4 cups of flour.
3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
4. To the dry ingredients, add the chopped dates and nuts. Toss well to completely coat them with the flour mixture.
5. In a separate bowl, whisk together the buttermilk, melted butter, maple syrup, eggs, and vanilla until well combined.
6. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just mixed. Do not overmix—fresh-milled Einkorn prefers a gentle touch.
7. Fold in the chopped dates and walnuts until evenly distributed.
8. Let the batter rest for 5–10 minutes to allow the Einkorn flour to fully absorb the liquid.
9. Pour the batter into the prepared loaf pan and smooth the top. Optional: Sprinkle a few extra chopped nuts or a pinch of raw sugar on top.
10. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Tent with foil after 40 minutes if the top is browning too quickly.
11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Variations
If you prefer a darker Date Nut Bread with a more intense flavor, substitute molasses for the maple syrup.

- Do Not Overmix – Einkorn flour absorbs fat and liquid differently than modern wheat. This recipe has been adjusted to reflect its unique qualities, with a balance of moisture and richness. Just remember to not overmix the batter. Make sure all the dry ingredients are moistened, then stop mixing!
- Allow Batter to Rest – Once you have gently mixed the batter and poured it into the loaf pan, allow it to rest for 5 minutes before baking. This rest time will allow the Einkorn to absorb as much of the liquid and fat as possible and create a better end product.
Storing and Reheating
Once cooled, wrap the Einkorn Date Nut Bread well and store it in an airtight container or bag in the refrigerator for 5-7 days or in the freezer for up to 3 months.
Allow slices of the bread to come up to room temperature and enjoy as is or warm in a toaster or toaster oven.

Whole grain Einkorn, also known as Einkorn berries or Einkorn wheat berries, is available from various sources. My favorite grower is Grand Teton Ancient Grains.
Definitely! The only difference is that you will need to decrease the buttermilk by 2 tablespoons.
1 cup of whole Einkorn berries will yield approximately 1 1/2 cups of fresh-milled Einkorn flour.
