When I sat down to chat with Jade Koyle of Grand Teton Ancient Grains, I immediately felt a sense of peace and purpose in his words. His family’s farm in the shadow of the Grand Tetons isn’t just a business—it’s a mission to restore the wholesome, God-given grains that once nourished families for generations. The Heart Behind Grand Teton Ancient Grains
Jade Koyle and his family live and work in southeast Idaho, where the foothills of the Grand Tetons rise in majestic beauty. When Jade talks about farming, you can hear the love in his voice. He’s not just growing food, he’s preserving the whole grains eaten by our ancestors, and doing it in a way that honors tradition.
Their farm and mills are fully regenerative and organic, which means they focus on restoring what has been lost in so much of modern agriculture: nutrient-rich soil, biodiversity, and purity in every grain. No pesticides. No glyphosate. No shortcuts. Just good, old-fashioned farming.
What Makes Ancient Grains So Special
There’s something almost timeless about ancient grains—the way they connect us to generations past while nourishing our bodies today.
Reconnecting with the Old Ways
As Jade shared during our conversation, the mission behind Grand Teton Ancient Grains is rooted in a simple truth: When God created the earth, He gave us everything we need. Over the years, science has taught us many things, but the Koyles believe—and I wholeheartedly agree—that many of the old ways remain the best ways.
Ancient grains like einkorn, emmer, and spelt haven’t been altered or hybridized the way modern wheat has. Their nutrients are intact, their flavors are rich and earthy, and they nourish body and spirit alike. These are the grains our ancestors baked with—the ones that filled kitchens with the scent of bread baking in the hearth and reminded families that food is meant to be shared.
Farming for the Future
The work happening at Grand Teton Ancient Grains isn’t just about today’s harvest—it’s about ensuring that future generations inherit land that’s richer, healthier, and more abundant than before. By farming with foresight, Jade and his family are proving that good stewardship is the truest form of sustainability.
Regenerative Practices that Restore the Earth
What impressed me most about Jade’s approach is the care and science behind his stewardship of the land. His team uses crop rotation, cover crops, compost, and microbial life to build fertility in the soil. These methods don’t just sustain the land—they improve it year after year.
And that care continues after the harvest. The Koyles protect their grains during cleaning and storage, ensuring the highest quality from their Idaho fields all the way to your grain mill or mixing bowl. It’s no wonder their ancient grains and flours are now known around the world.
A Family Rooted in Faith and Purpose
Grand Teton Ancient Grains isn’t just a farm—it’s a family mission. They are all part of the story. Their work reminds us that farming can still be a calling, not just a career. They see growing ancient grains as a journey that connects us to the land, to each other, and to God’s design.
When we choose foods grown with care, we’re feeding more than our bodies. We’re creating a Traditional Foods Kitchen that nourishes our bodies and brains for lifelong good health.
My Takeaway from Talking with Jade
Spending time with Jade reminded me that the modern pioneer spirit is alive and well. It lives in families like the Koyles, who are working the land with integrity and purpose, and it lives in all of us who are trying to return traditional foods, properly prepared, to our kitchens.
If you haven’t yet baked with ancient grains, I encourage you to start with spelt. Its gentle flavor and similarity in outcome to modern-day wheat make every loaf, quick bread, or muffin feel like a small celebration of success. Knowing that you added in that special ingredient…love…AND that it came from farmers who treat their soil like family — well, that makes it taste even better!

Bringing Ancient Grains Into Your Own Kitchen
If you’re new to baking with ancient grains, one of the most rewarding steps you can take is grinding your own flour. Whole grain berries—like einkorn, emmer, or spelt—stay fresh for months or even years when properly stored, and when you mill them right before baking, you capture all of their natural flavor and nutrients. The aroma alone is enough to make you fall in love with the process!
Grinding Whole Grains
In my How to Make All Purpose Einkorn Flour at Home video, I show you exactly how to grind einkorn berries into flour using a simple home grain mill. It’s easier than you might think, and it opens the door to fresher, more wholesome baking. And although I am demonstrating this process using einkorn whole grain, the process can be applied to any whole grain of your choice.
Making your own flour is one of those small, satisfying steps that connects you to generations past—and it’s the perfect way to make the most of beautiful whole grains from family farms like Grand Teton Ancient Grains.
Grind Your Own Flour with the Mockmill
When it comes to electric grain mills, after I did A LOT of research, I decided to buy a Mockmill. And am I so happy I did! The Mockmill is a very affordable but beautifully crafted German-made mill that stone grinds grain with settings ranging from 1 to 10—fine to coarse ground grain. I still use the Mockmill I purchased in 2018 to make homemade einkorn flour and other fresh flour from ancient grains.
