  • 1/3 cup white cane sugar
  • Juice of 1 lemon

  • 1/4 cup ginger bug (Learn how to make a Ginger Bug.)
  • 2 cups chlorine-free water

  1. Puree the strawberries


In a food processor or blender, combine the sliced strawberries with the sugar and lemon juice. Blend until smooth.

  1. Strain the mixture

Pour the pureed strawberry mixture through a fine mesh strainer into a large bowl to remove seeds and pulp.

  1. Add the ginger bug and water


To the strained juice, add the ginger bug and just enough chlorine-free water to bring the total liquid to 4 cups. Stir gently to combine.

  1. Transfer to a jar


Pour the mixture into a clean quart-size canning jar. Seal with a tight-fitting lid.

  1. Ferment at room temperature

Store the jar in a warm spot out of direct sunlight. Each day, slightly loosen the lid to release any built-up carbon dioxide.

  • 1 Blender or Food Process
  • 1 Colander
  • 1 Flour sack towel or cheesecloth
  • 1 Large bowl
  • 1 Half-gallon jar with screw on lid
  • 4 Glass bottles with screw on lids
