I was happy to chat with my sweet Kitchen Pioneers during this month’s live stream on January 19, 2022. Among the topics, we talked about were rising grocery prices, food shortages, and the importance of growing as much food as we can!

Rising Grocery Prices and Food Shortages Persist
Although we hear some news outlets announce that inflation may be stabilizing, many of us continue to see rising grocery prices. In my area, a six-pack of canned chicken was around $12 at my local grocery store, but now it is over $22. That’s quite the price increase! And now the prices of eggs are on the rise if you can even find them in stock at the supermarket.
A trip to your local grocery store summarizes the two main challenges home cooks have in making meals for their families:
- Rising grocery prices
- Food shortages
To tackle these challenges, we will need to be creative when it comes to meal preparation. We also need to be open to trying new foods and different brands. The days of being brand loyal are long gone!
Try New Foods to Fight Rising Grocery Prices
To wrestle with rising grocery prices, you need to be open to trying new foods. And one of the new foods I encourage you to try is kippers. These are canned, shelf-stable, smoked herring. You will be surprised how delicious they are!
Even though kippers, too, have gone up in price, they are still relatively reasonable for the nutrition they offer. Kippers provide a powerhouse of Omega-3s, the good fat that contributes to strong brain and heart health. So if salmon is off the table due to recent price increases or your other favorite fishes are in short supply, kippers can take their place.
And while we’re on the topic of canned fish, if you have never had sardines, buy one can and try the best sardines recipe. You will be surprised by how delicious sardines can be! And better yet, this is a superfood. Sardines are nutrient-dense and also extremely rich in beneficial Omega-3 fatty acids.
Start a Garden to Fight Rising Grocery Prices
To fight rising grocery prices, sometimes, we need to get our hands into the dirt. We may not be in a position to raise livestock, but we can grow some vegetables, even if we just start with a sunny windowsill garden.
You may think you don’t have a green thumb, but you will be surprised at how much you will learn month after month once you start to garden. Before you know it, you will have some herbs, cherry tomatoes, and even some squash growing right on your windowsill, patio or balcony garden, or small kitchen garden.
In the following videos, I show you how you can create a kitchen garden from kitchen scraps, and I also give you a tour of my garden after I rebuilt it following the terrible Texas winter storm in 2021.
