Here are just a few ways you can customize your muffin mix with mix-ins:

- Would you like to turn your Muffin Mix into Cinnamon Apple Muffins with a Cinnamon Crumb Topping? You can! Just add a cup and half of chopped apples to your batter and a sprinkle of cinnamon to your Make Ahead Crumb Topping.
- Pumpkin
- Ready for fall-inspired pumpkin muffins? Just add in a cup and a half of pumpkin puree.
- Banana Nut
- Thinking Banana Nut might delicious? Great! Just add a cup of mashed banana to your mix along with a 1/2 cup of chopped nuts.

Healthy Make Ahead Muffin Mix
Equipment
- 1 Quart-Sized jar with lid
- 12-cup muffin tin
Ingredients
Healthy Make Ahead Muffin Mix
- 2 1/2 cups Whole grain flour such as whole wheat flour You can also use white whole wheat, einkorn, or spelt flours or any other whole grain flour.
- 1/2 cup All-purpose flour You can use any all-purpose flour, including einkorn all-purpose flour or spelt all-purpose flour.
- 4 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1 cup Sucanat or other whole sweetener, ground into a powdered form. (See video.) You can also use other whole sweeteners, such as maple sugar, coconut sugar, or date sugar.
Healthy Make Ahead Crumb Topping Mix
- 2 cups Whole grain flour such as whole wheat flour You can also use white whole wheat, einkorn, or spelt flours or any other whole grain flour.
- 1/2 cup All-purpose flour You can use any all-purpose flour, including einkorn all-purpose flour or spelt all-purpose flour.
- 1 1/2 cups Sucanat or other whole sweetener, ground into a powdered form. (See video.) You can also use other whole sweeteners, such as maple sugar, coconut sugar, or date sugar.
- 1/2 tsp Salt
To Make Muffins using Healthy Make Ahead Muffin Mix
- 1 jar Healthy Make Ahead Muffin Mix
- 2 Eggs
- 1 cup Whole milk You can substitute non-dairy milk, such as oat milk or almond milk.
- 1/2 cup Butter, melted You can use coconut oil or other healthy mild-flavored unprocessed oil.
- 1/2 cup Full-fat yogurt, plain You can substitute 1/2 cup sour cream.
- 1 tsp Vanilla extract
- 1 1/2 cup "Mix-ins" See "Recipe Notes" below.
To Make Crumb Topping using Healthy Make Ahead Crumb Topping Mix
- 1 jar Healthy Make Ahead Crumb Topping Mix
- 1 cup Butter, softened 1 cup of butter equals 2 sticks of butter.
Instructions
To make Healthy Make Ahead Muffin Mix
- Add all ingredients into a large bowl and whisk well until completely mixed.
- Transfer the mix to a quart-sized jar and put the lid on tightly.
- You can store this shelf-stable mix in a pantry for up to 6 months.
To make Healthy Make Ahead Crumb Topping Mix
- Add all ingredients into a large bowl and whisk well until completely mixed.
- Transfer the mix to a quart-sized jar and put the lid on tightly.
- You can store this shelf-stable mix in a pantry for up to 6 months.
How to use Healthy Make Ahead Muffin Mix to make muffins
- Preheat oven to 375ยฐF. Line a 12-cup muffin tin with muffin liners or lightly grease the muffin tin with butter.
- Pour your jar of the Healthy Make Ahead Muffin Mix into a large bowl. If your mix-ins contain dry ingredients, such as chopped nuts, raisins, or chocolate chips, add them to the dry ingredients and mix well to combine. You want to make sure that the mix-ins are well coated with the flour. Set aside.
- In a second bowl, combine the melted butter (or oil if using), milk, yogurt, eggs, and extract. Mix well to blend thoroughly. If your mix-ins include wet ingredients, such as mashed banana, apple sauce, or pumpkin puree, add them to the wet ingredients and mix well to combine.
- Add the wet ingredients to the dry ingredients. Fold the mixture gently until the dry ingredients are just moistened. DO NOT OVER MIX! The batter will be lumpy. Fill muffin cups to almost full, leaving a small amount of room for the crumb topping.
- Add a tablespoon or more of crumb topping to the top of each muffin. (See Crumb Topping instructions below.)
- Place your filled muffin tin on the middle rack of the preheated oven and bake for 25-35 minutes until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffin tin from the oven and allow the tin to cool on a wire rack.
- Once cool, remove the muffins from the muffin tin. Serve or store the muffins well wrapped in the refrigerator. Muffins will stay fresh refrigerated for 2-3 days.
How to use Healthy Make Ahead Crumb Topping Mix to make Crumb Topping
- Pour crumb topping mix into a large bowl and add 1 cup (2 sticks) of unsalted butter.
- With clean hands, two forks, or a pastry cutter, mix the crumb topping mix with butter until it resembles a mixture of fine sand with pebble or pea-sized pieces of crumb topping throughout. Sprinkle the crumb topping on top of the muffin batter in the muffin tin as instructed above. Freeze any unused crumb topping. It will stay fresh in the freezer for 2-3 months.
