A Versatile Healthy Muffin Mix

You’ll love having this Healthy Make Ahead Muffin Mix on hand because:

  • The mix contains whole grains, and
  • The mix is so versatile. (You can turn this mix into any type of muffin that you want it to be!)

You can follow a simple process to transform your muffin mix by adding what I like to call “mix-ins.” For 12 muffins, you’ll need one and one-half cups of mix-ins. And what can those mix-ins be? Glad you asked!

Apple, Pumpkin, Banana Nut Mix-Ins

Here are just a few ways you can customize your muffin mix with mix-ins:

  • Apples
    • Would you like to turn your Muffin Mix into Cinnamon Apple Muffins with a Cinnamon Crumb Topping? You can! Just add a cup and half of chopped apples to your batter and a sprinkle of cinnamon to your Make Ahead Crumb Topping.
  • Pumpkin
    • Ready for fall-inspired pumpkin muffins? Just add in a cup and a half of pumpkin puree.
  • Banana Nut
    • Thinking Banana Nut might delicious? Great! Just add a cup of mashed banana to your mix along with a 1/2 cup of chopped nuts.

Be sure to read the printable recipe where I share lots of ideas for mix-ins, but that’s just the beginning. Come up with your own combinations. All you need to remember is to keep your mix-ins to 1 1/2 cups, and your muffins should bake up wonderfully!

Make Sprouted Flour and Grind Your Grain

If you would like to really enhance the nutrition of your Make Ahead Muffin Mix, try to make sprouted flour, and use it in your recipe. This process is easier than it sounds, and I walk you through all the steps in my tutorial video.

And if you want to buy whole grain and then grind your own grain at home for the freshest grain possible, check out my favorite—and affordable—grain mill in my Mockmill unboxing and demonstration video.

How to Store Your Make Ahead Mix

When it comes to storing Make Ahead Mixes made from Whole Grain Flours, I recommend using silica gel packs, not oxygen absorbers. In addition to my muffin mix recipe video, you can learn about the difference between oxygen absorbers and silica gel packs in my tutorial video that’s part of my prepper pantry series.

How to use Healthy Make Ahead Muffin Mix to make muffins

  • Preheat oven to 375°F. Line a 12-cup muffin tin with muffin liners or lightly grease the muffin tin with butter.
  • Pour your jar of the Healthy Make Ahead Muffin Mix into a large bowl. If your mix-ins contain dry ingredients, such as chopped nuts, raisins, or chocolate chips, add them to the dry ingredients and mix well to combine. You want to make sure that the mix-ins are well coated with the flour. Set aside.
  • In a second bowl, combine the melted butter (or oil if using), milk, yogurt, eggs, and extract. Mix well to blend thoroughly. If your mix-ins include wet ingredients, such as mashed banana, apple sauce, or pumpkin puree, add them to the wet ingredients and mix well to combine.
  • Add the wet ingredients to the dry ingredients. Fold the mixture gently until the dry ingredients are just moistened. DO NOT OVER MIX! The batter will be lumpy. Fill muffin cups to almost full, leaving a small amount of room for the crumb topping.
  • Add a tablespoon or more of crumb topping to the top of each muffin. (See Crumb Topping instructions below.)
  • Place your filled muffin tin on the middle rack of the preheated oven and bake for 25-35 minutes until a toothpick inserted into the center of a muffin comes out clean.
  • Remove the muffin tin from the oven and allow the tin to cool on a wire rack.
  • Once cool, remove the muffins from the muffin tin. Serve or store the muffins well wrapped in the refrigerator. Muffins will stay fresh refrigerated for 2-3 days.

  • Pour crumb topping mix into a large bowl and add 1 cup (2 sticks) of unsalted butter.
  • With clean hands, two forks, or a pastry cutter, mix the crumb topping mix with butter until it resembles a mixture of fine sand with pebble or pea-sized pieces of crumb topping throughout. Sprinkle the crumb topping on top of the muffin batter in the muffin tin as instructed above. Freeze any unused crumb topping. It will stay fresh in the freezer for 2-3 months.

Notes

Mix-Ins: For “mix-ins,” you can add 1  1 /2 cups of your choice of additions.  Options include chopped apples, apple sauce, pumpkin puree, mashed banana, chopped nuts, seeds, small dried fruit (such as raisins, currants, cranberries), chocolate chips, or any combination of these.
For example, if you want to make apple nut muffins, you could add 1 cup of chopped apples and 1/2 cup of chopped nuts and toss them with your dry Make Ahead Muffin Mix. If you want to use a fruit puree or mashed fruit, you would blend this ingredient with your wet ingredients and then add them to your dry mix to combine.
Adding Spices:  If you want to add spices to your muffins, such as cinnamon, you would add this to your Make Ahead Muffin Mix once you pour it into your mixing bowl.  For example, if you are making apple nut muffins and you want to add cinnamon, you would add 1 teaspoon (or more to taste) of ground cinnamon to your dry muffin mix.
The same process applies to the crumb topping.  If you want to add a spice, such as cinnamon, to your crumb topping, you would add it to the dry crumb topping mix once you pour it into your mixing bowl, but before adding the butter.  You would add 1 teaspoon of ground cinnamon (or more to taste) or other spice or spice blend, such as apple pie spice or pumpkin pie spice, and mix it well with the other dry ingredients.

My kids loved the banana muffins I made with this recipe. I want to make chocolate for them next time, but how much coco powder and chocolate chips should I use as your add in is just 1 1/2 mix in.

    1. Mary Bryant Shrader says:

Hi Rayla, This is a great question. I might try 1 cup of chocolate chips and a 1/4 to a 1/2 cup of cocoa powder. You might need a bit more liquid to get the right consistency. But I think they should turn out great! Love, Mary
