Homemade Mayonnaise in 1 minute? Really? You Bet! Not only is this mayonnaise easy and fast to make, but it’s also delicious and nutritious thanks to a wonderful blend of oils.

Troubling Ingredients in Store-Bought Mayo

I have never been satisfied with the mayonnaise that I can find at the grocery store. Don’t get me wrong. Some of them taste great. But it’s the ingredients that really trouble me.

So many of the store bought mayos are made with soybean oil. And that is one highly-processed oil I really try to avoid in my diet because it is highly processed.

Is Making Mayo Difficult?

However, making homemade mayo can present such a chore. It all begins with hauling out the food processor. And to me, that signals there is a big job ahead!

Next, then the process of streaming in the oil always seems to take so long. Plus, it’s easy to pour the oil too quickly. All that does is create a big oily mess of “broken” mayo.

Easier Way to Make Homemade Mayonnaise

The good news is that there is a much easier way to make homemade mayonnaise. And it involves using an immersion blender. You may also know it as a stick blender or hand blender.

Thanks so this technique, you can have a cups worth of mayo ready in about one minute! And cleanup is a snap. Make the mayonnaise in the jar you plan to store it in so all you have to wash is the bottom part of the immersion blender. It couldn’t be easier!

Which Oil is Best for Homemade Mayonnaise?

As you get your jar and immersion blender ready, you need to think about the choice of oil or oils that you will want to use to make your mayo. My favorite combination is one part of each of the following ingredients:

  • Coconut oil
  • Olive oil
  • Sesame oil (un-toasted)

I love that this combination includes a nice variety of nutrients.

Can I Use Avocado Oil to Make Mayo?

But there are so many options of healthy oils to choose from to make mayonnaise. All avocado is a popular choice. The final product can have a bit of a strong flavor for me though. So if I use avocado oil I like to mix it with sesame oil to lighten the flavor a bit.

Homemade Mayonnaise in 1 minute

Cook: 1 minute
Total: 2 minutes
Yield: 12 servings
This fast and easy homemade mayonnaise is also delicious and nutritious thanks to a wonderful blend of oils.

Ingredients

  • 1 large Egg or two small eggs
  • 1 tablespoon Raw apple cider vinegar
  • 1 teaspoon Fine ground sea salt
  • 1/3 cup Coconut oil liquified to room temperature
  • 1/3 cup Sesame oil
  • 1/3 cup Extra virgin olive oil
  • 1 tablespoon Whey optional

Instructions 

  • Put all ingredients into a jar. If you want, you may also add whey.
  • Place an immersion blender into the jar so that the bottom of the blender is on top of the egg and touching the bottom of the jar.
  • Turn on the immersion blender and blend for 20-30 seconds and watch as the mixture emulsifies.
  • Next, move the immersion blender up and down for another 20-30 seconds to make sure that all the oil is incorporated into the mixture
  • Remove the immersion blender from the jar and refrigerate the mayonnaise. The mayonnaise will stay fresh refrigerated for 2 weeks.

    Oh, Mary, thank you for this recipe. I just made mayo for the first time ever, it came out so thick and creamy. I did add a tsp of dry mustard to make sure it would emulsify (oh ye of little faith, right!? I read the comments). I have been watching mayo videos, but yours was spot on. I could not decide on which oil to use, and adding a mix of all 3 made sense. I was also looking for mayo that would keep longer than a week, and your acv tip nailed it. I love mayo, I have been known to eat onion and garlic sandwiches with mayo — so good. They will now be better for me with this homemade mayo. I just need a bread recipe. Have you ever used lupin flour and oat fiber in your bread recipes without the wheat? I need to make carb free bread. Thank you again. Take care and be well.

    Mary, my question is about Coconut oil, is it refined or unrefined, I know the refined has less a coconut flavor so I was curious, thank you.

    1. Hi Shelley, I use unrefined coconut oil, so there is more of a taste to it, I prefer it because it is less processed but you can use the refined version if you want a more mild taste. Love, Mary

    I don’t have any electric blender or food processor, so I made this in my 2 cup measure, with a whisk, and it only took a few minutes. I added the oil very slowly at first, then more at a time after it started to thicken.

  5. Mary, I just made your may recipe. So easy. I think I will cut back on the amounts of salt and the sesame oil, just our family’s preference. It was so easy and it looks beautiful. Will make potato or macoroni salad with it tonight. A prepping note…my immersion blender wand would not fit in a regular size mason jar’s opening so I used a 2 cup pyrex measuring cup and had no overflow. I remember making mayo with my mother and the trickling of oil and it seemed to take forever. This is just so simple. Thank you for sharing. “Try it, you’ll like it.”😁

    Hi Mary , this is the first time I came across your mayonnaise video and you yourself . I’ve always wanted to make mayonnaise . even thou you wash the outside of your row egg . Is it then OK to eat the inside of the egg with out the worries of some kind of bacteria . What is your though on this please . Thank you so much Mary .

      Thanks so much for your comment. That’s a great question! The choice is personal. There is always a chance that there is bacteria present in the raw egg, so some people do not like to use raw eggs. You will have to make the decision that is best for you and best for your particular health situation. So sorry I could not be more definitive.
