Will Whole Wheat Pastry Flour Make Them Light and Tender?

Today I thought I would try my hand at making biscuits using Whole Wheat Pastry Flour. In my search to make more nutritious biscuits, I’ve tried using whole wheat flour, spelt flour, and sprouted spelt flour. Whole wheat produced a dense biscuit. Spelt came out a bit lighter. And sprouted spelt was a slight improvement over its non-sprouted counterpart. But none could compare to good ol’ white flour.
